Rosemary and Garlic Scalloped Potatoes

Potato gratin, simplified. If you're feeling extremely lazy and want to simplify a simple recipe even further, this one's for you.

Ingredients
- 1 yellow onion, sliced
- 700-800g (25-28 oz) russet potatoes, peeled and sliced (~5mm)
- 3 cloves garlic, thinly sliced
- 100 mL (~0.4 cups) vegetable stock
- 50 mL (~0.2 cups) olive oil
- 100g (~1 cup) grated parmesan
- fresh rosemary
Recipe
Preheat oven to 180°C/260°F. Layer potatoes, adding onion, garlic and rosemary as you go along. Sprinkle with salt and add a few pepper grinds as you go along. Pour hot stock over the top and add parmesan and rosemary. Cover with foil and bake in the oven for 45 minutes then uncover and bake for another 10 minutes or until golden brown and crispy on top.
