Quick Cannellini Bean Salad

If you use the right cannelloni beans, their smooth creaminess contrasts wonderfully with the crunch of the fresh cucumber.

Ingredients
- Cannellini beans or Spanish Alubias, rinsed (I highly recommend this brand; you can also substitute for chickpeas)
- Cherry tomatoes, halved or quartered
- Cucumber, peeled
- Red onion, minced
- Flat leaf parsley, roughly chopped
- Lemon, juiced
Note: quantities not specified to adapt to taste.
Recipe
Slice cucumber twice length-wise to quarter, then slice width-wise. Combine beans, tomatoes, cucumber and onion. Add parsley, lemon juice, salt flakes and freshly ground pepper to taste.
