Goat's Cheese and Fig Toasts with Thyme and Honey

Ingredients

- 1/2 rustic french baguette, sliced crosswise

- high-quality extra-virgin olive oil

- goat's cheese log (I like Neal's Yard or Soignon), sliced crosswise

- fresh figs, sliced in half

- dried thyme

- chestnut honey


Recipe

  1. Drizzle baguette slices with olive oil and sprinkle with salt flakes

  2. Lay one goat's cheese slice and one half fig on each baguette slice, pushing the fig slightly into the cheese so it stays in place

  3. Trickle honey over the top and sprinkle with thyme and salt flakes
